Vegetarian Roasted Vegetable Salad

Ingredients:

  • 2 zucchinis, sliced
  • 1 bell pepper, diced
  • 1 red onion, chopped
  • 1 cup cherry tomatoes
  • 2 cups spinach leaves
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/4 cup feta cheese (optional)
  • Balsamic vinegar for dressing

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the zucchini, bell pepper, red onion, and cherry tomatoes.
  3. Drizzle the olive oil over the vegetables and sprinkle with oregano, salt, and pepper. Toss until evenly coated.
  4. Spread the vegetables on a baking sheet in a single layer.
  5. Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly caramelized.
  6. In a serving bowl, combine the roasted vegetables with fresh spinach leaves.
  7. If desired, sprinkle feta cheese over the salad and drizzle with balsamic vinegar.
  8. Toss to combine and serve warm or at room temperature.
