Ingredients:
- 2 zucchinis, sliced
- 1 bell pepper, diced
- 1 red onion, chopped
- 1 cup cherry tomatoes
- 2 cups spinach leaves
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/4 cup feta cheese (optional)
- Balsamic vinegar for dressing
Instructions:
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the zucchini, bell pepper, red onion, and cherry tomatoes.
- Drizzle the olive oil over the vegetables and sprinkle with oregano, salt, and pepper. Toss until evenly coated.
